Ingredients

  • 4 medium zucchini
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 clove garlic, minced
  • 1 cup marinara sauce
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini lengthwise into thin strips.
  3. Roast the zucchini strips on a baking sheet for 10 minutes to soften.
  4. Mix the ricotta cheese, Parmesan, basil, parsley, garlic, lemon juice, salt, and pepper in a bowl.
  5. Fill each zucchini strip with the cheese mixture and roll them up.
  6. Place the rolls seam side down in a baking dish.
  7. Pour marinara sauce over the rolls.
  8. Bake for 25-30 minutes until bubbly and golden.

Notes

For a dairy-free option, substitute ricotta with cashew cheese. This dish can be prepared ahead of time and refrigerated before baking.
