A vibrant and satisfying dish combining cheese-filled tortellini with fresh vegetables and a zesty dressing, perfect for summer cookouts and quick weeknight dinners.

Ingredients

  • 1 package cheese-filled tortellini
  • 1 cup bell peppers, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons vinegar
  • Salt and pepper to taste

Instructions

  1. Boil the tortellini according to package instructions until al dente (3-5 minutes).
  2. Drain and rinse the tortellini under cold water.
  3. Combine the cooked tortellini with chopped vegetables, herbs, and dressing in a large bowl.
  4. Toss everything together until well-coated.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

For added protein, consider mixing in grilled chicken, shrimp, or chickpeas. Allow flavors to meld by preparing the salad a few hours ahead.
