A delicious and moist zucchini bread, perfect for breakfast or as a snack, utilizing summer’s best vegetable.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups grated zucchini (with excess moisture squeezed out)
  • 1 tsp vanilla extract
  • Optional: nuts or chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grate the zucchini and squeeze out excess moisture.
  3. Mix the dry ingredients (flour, baking soda, salt) in one bowl.
  4. Combine the wet ingredients (sugar, oil, eggs, vanilla) in another bowl.
  5. Stir the grated zucchini into the wet mixture.
  6. Fold the dry ingredients into the wet mixture until just combined.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Let cool before slicing.
