Ingredients

  • 2 cups grated zucchini
  • 1 ½ cups all-purpose flour
  • 1 cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. Grate the zucchini and pat it dry to remove excess moisture.
  3. Combine the dry ingredients in a bowl and mix well.
  4. Create a well in the center and add the wet ingredients.
  5. Stir gently until just combined, avoiding over-mixing.
  6. Pour the batter into the prepared pan.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Let it cool for a bit before slicing.
