A delightful quick bread bursting with fresh peaches and a hint of cinnamon, perfect for brunch or a sweet afternoon treat.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups fresh peaches, diced

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the dry ingredients (flour, baking powder, cinnamon, and salt) in a large bowl.
  3. Cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fold in the diced peaches gently.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until golden and a toothpick comes out clean.

Notes

For best results, use ripe peaches; you can toss them in flour to prevent sinking in the batter.
