Ingredients

  • 2 lbs chuck roast
  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp ground cumin
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 cup BBQ sauce
  • 8 corn or flour tortillas
  • Diced onions, for topping
  • Fresh cilantro, for topping
  • Lime wedges, for serving

Instructions

  1. Rub the chuck roast with smoked paprika, garlic powder, onion powder, cumin, black pepper, and salt.
  2. Smoke the beef low and slow until fork-tender, about 4-6 hours.
  3. Shred the smoked beef and mix with BBQ sauce.
  4. Warm the tortillas just before serving to keep them pliable.
  5. Load each tortilla with shredded beef.
  6. Top with diced onions, cilantro, and a squeeze of lime.

Notes

For a vegetarian option, substitute beef with jackfruit or tofu. Adjust the cooking time accordingly.
