A delightful dish that combines the tartness of rhubarb with the sweetness of apples, perfect for any occasion.

Ingredients

  • 2 cups fresh rhubarb, chopped
  • 2 cups apples, chopped (Fuji or Honeycrisp recommended)
  • 1/4 cup water
  • 1/4 cup sugar or sweetener of choice
  • Juice of 1 lemon (optional)
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Chop the rhubarb and apples into similar-sized pieces.
  2. Combine the chopped rhubarb and apples with water and sweetener in a pot.
  3. Bring the mixture to a gentle simmer.
  4. Cook until the fruit is tender, about 15-20 minutes.
  5. Blend with a blender or immersion mixer to achieve desired texture.

Notes

Adjustment of sweetness can be done during cooking. Store in an airtight container for up to a week.
