A delightful crunch and tang await with these easy homemade refrigerator pickles. Perfect for snacks or as a savory addition to any meal.

Ingredients

  • 4 medium cucumbers, sliced
  • 1 cup vinegar (white or apple cider)
  • 1 cup water
  • 2 tablespoons sugar
  • 2 cloves garlic, minced
  • 1 tablespoon dill seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. Slice the cucumbers into rounds or spears.
  2. Place them in clean glass jars.
  3. Combine equal parts vinegar and water in a small saucepan with sugar and spices.
  4. Heat the mixture just until the sugar dissolves.
  5. Pour the brine over the cucumbers in the jars.
  6. Seal the jars with lids and let them cool.
  7. Refrigerate for at least a few hours, preferably overnight, before enjoying.

Notes

For best results, use fresh, firm cucumbers and taste the brine before pouring it over the cucumbers to adjust flavors.
