Crunchy and tangy refrigerator pickles that elevate any meal with a burst of flavor.

Ingredients

  • 4 cups fresh cucumbers, thinly sliced
  • 1 cup distilled vinegar (or apple cider vinegar)
  • 1 cup water
  • 1/4 cup sugar
  • 1 tablespoon fresh dill
  • 1 teaspoon mustard seeds
  • 1 teaspoon black peppercorns
  • Optional: sliced carrots, radishes, or onions

Instructions

  1. Slice the cucumbers and optional vegetables thinly.
  2. Combine vinegar, water, sugar, and spices in a saucepan.
  3. Heat until the sugar is dissolved and the mixture is fragrant.
  4. Pour the hot brine over the prepared vegetables in jars.
  5. Let them cool to room temperature.
  6. Refrigerate for at least 24 hours before enjoying.

Notes

For enhanced flavor, allow the pickles to sit for at least 24 hours before tasting.
