A light and refreshing tapioca dessert featuring coconut milk and vibrant fruits. Perfect for summer gatherings.

Ingredients

  • 1 cup tapioca pearls
  • 4 cups water
  • 1 can (400ml) coconut milk
  • 2 tablespoons honey or agave (to taste)
  • 1 cup mango, diced
  • 1 cup kiwi, diced
  • 1 cup mixed berries
  • Toasted coconut for topping (optional)

Instructions

  1. Rinse the tapioca pearls until the water runs clear.
  2. Cook them in a pot of simmering water, stirring occasionally until they turn translucent.
  3. Drain and rinse the cooked tapioca pearls.
  4. Mix the pearls with sweetened coconut milk.
  5. Gently fold in your choice of fruits.
  6. Chill in the refrigerator for at least 1 hour before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Best enjoyed fresh.
