A refreshing twist on the classic Italian dessert, combining layers of cream, zesty lemon, and raspberries.

Ingredients

  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup lemon juice
  • 2 cups fresh raspberries
  • 1 cup strong brewed coffee
  • 10 oz ladyfingers
  • Powdered sugar (for dusting)

Instructions

  1. Whip the mascarpone cheese and heavy cream until fluffy.
  2. Mix the lemon juice with the brewed coffee.
  3. Dip the ladyfingers in the coffee-lemon mix quickly, then layer them in a serving dish.
  4. Add the whipped cream mixture and fresh raspberries as layers.
  5. Chill in the refrigerator for at least 4 hours before serving.
  6. Dust with powdered sugar or garnish with lemon zest before serving.

Notes

For the best results, use room temperature mascarpone and chill for optimal flavor development.
