A moist and fluffy cake layered with the tropical flavors of pineapple and coconut, perfect for celebrations and gatherings.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup crushed pineapple, drained
  • 1 cup shredded coconut
  • 3 large eggs
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup coconut extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients (flour, sugar, baking powder, baking soda, and salt) in a bowl.
  3. Combine the wet ingredients (eggs, crushed pineapple, and sour cream) in another bowl.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Divide the batter evenly between prepared cake pans.
  6. Bake for 30-35 minutes, or until golden brown and a toothpick comes out clean.
  7. Cool completely before frosting.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. This cake can also be frozen for up to 3 months.
