Delicious zucchini bread with a crunchy pecan praline topping, perfect for breakfast, snacks, or dessert.

Ingredients

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup chopped pecans (for praline topping)
  • 1/2 cup brown sugar (for praline topping)
  • 1/4 cup butter (for praline topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan.
  2. In one bowl, mix the dry ingredients: flour, sugars, baking soda, baking powder, and salt.
  3. In another bowl, blend the wet ingredients: eggs, oil, vanilla, and grated zucchini.
  4. Combine the wet and dry mixtures until just mixed; avoid overmixing.
  5. Pour the batter into the loaf pan and sprinkle with the pecan praline topping made of chopped pecans, brown sugar, and butter.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Let the bread cool before slicing.
