A delightful medley of flavors with tender orzo pasta, fresh vegetables, and a zesty dressing, perfect for any gathering or light meal.

Ingredients

  • 1 cup orzo pasta
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta in boiling water until al dente; drain and cool.
  2. Chop the bell pepper, cucumber, and cherry tomatoes.
  3. Whisk together olive oil, lemon juice, and herbs for the dressing.
  4. Combine the cooled orzo with the chopped veggies and dressing; toss gently to coat.
  5. Serve in a large bowl, garnished with extra herbs.

Notes

To prevent the orzo from becoming mushy, rinse it under cold water after cooking. Adjust seasoning to taste.
