This no-bake pineapple cheesecake features a buttery graham cracker crust, creamy cheese filling, and refreshing pineapple topping, perfect for any occasion.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 14 oz sweetened condensed milk
  • 2 tbsp lemon juice
  • 1 cup fresh or canned pineapple, diced
  • Coconut cream (optional, for drizzling)

Instructions

  1. Crush the graham crackers until fine and mix with melted butter.
  2. Press this mixture firmly into the bottom of a springform pan.
  3. Blend the cream cheese with sweetened condensed milk until smooth.
  4. Add lemon juice for brightness and mix.
  5. Pour the mixture over the crust and chill until set, about 4 hours.
  6. Top with diced pineapple and drizzle with coconut cream if desired.
