Delightfully moist zucchini bread, perfect for breakfast or a snack, packed with subtle sweetness from fresh zucchini.

Ingredients

  • 2 cups grated zucchini
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the grated zucchini, eggs, and oil in a large bowl until well combined.
  3. Gradually fold in the dry ingredients until just combined; do not overmix.
  4. Pour the batter into the prepared pan, leveling it off.
  5. Bake for 50-60 minutes, or until a toothpick comes out clean.
  6. Cool in the pan for a few minutes before transferring to a wire rack.
