A moist and tender cake made with ripe bananas, perfect for a cozy morning or sweet afternoon treat.

Ingredients

  • 2 ripe bananas
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 eggs
  • 1/4 cup milk (or almond/oat milk)
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare mini loaf pans with baking spray or parchment paper.
  2. Mash the ripe bananas until smooth in a mixing bowl.
  3. Whisk together the dry ingredients in a separate bowl: flour, sugar, baking powder, baking soda, and salt.
  4. Combine the mashed bananas, milk, melted butter, eggs, and vanilla extract, and stir until just mixed.
  5. Add the dry ingredients to the wet mixture and stir until just combined to avoid overmixing.
  6. Pour the batter into the prepared pans.
  7. Bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool slightly before removing from the pans.

Notes

Best served warm with honey, maple syrup, or your favorite nut butter. Store leftovers in an airtight container in the refrigerator for up to a week.
