A vibrant salad featuring marinated chicken glazed in a savory-sweet Korean BBQ sauce, combined with fresh vegetables and a zesty dressing.

Ingredients

  • 2 chicken breasts
  • 1/2 cup Korean BBQ sauce
  • 2 cups lettuce, chopped
  • 1 cucumber, sliced
  • 2 carrots, julienned
  • 2 tbsp sesame oil
  • 1 tbsp ginger, grated
  • Sesame seeds, for garnish
  • Green onions, for garnish

Instructions

  1. Marinate the chicken breasts in Korean BBQ sauce for at least 30 minutes.
  2. Grill or sear the chicken for 6-8 minutes on each side until cooked through.
  3. Chop the fresh veggies: lettuce, cucumber, and carrots.
  4. Slice the grilled chicken into strips.
  5. Toss the chicken with the chopped vegetables.
  6. Drizzle with sesame oil and sprinkle with sesame seeds and green onions before serving.

Notes

For vegetarian options, use marinated tofu or tempeh instead of chicken.
