Ingredients

  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 4 large egg yolks
  • ½ cup fresh key lime juice
  • Whipped cream (for topping)
  • Lime zest (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the crushed graham crackers, melted butter, and sugar in a bowl.
  3. Press the mixture into a baking dish to form the crust.
  4. Bake the crust for about 10 minutes or until golden.
  5. Mix the sweetened condensed milk, egg yolks, and lime juice until smooth.
  6. Pour the filling over the cooled crust.
  7. Bake until just set, about 15-20 minutes.
  8. Cool the bars, then chill in the fridge until firm.
  9. Cut into squares and serve with whipped cream and lime zest.

Notes

For best flavor, use fresh key limes. Let the filling cool before refrigerating to prevent condensation.
