A vibrant and satisfying dish with grilled honey lime chicken and creamy avocado rice, perfect for a weeknight dinner.

Ingredients

  • 2 chicken breasts
  • 1/4 cup honey
  • 2 tablespoons lime juice
  • 2 ripe avocados
  • 2 cups cooked rice
  • Fresh cilantro (for garnish)
  • Lime zest (for garnish)

Instructions

  1. Marinate the chicken in honey and lime juice for at least 15 minutes.
  2. Grill the chicken over medium heat for 6-7 minutes per side until an internal temperature of 165°F is reached.
  3. Mash the avocados and fold them into the cooked rice to create creamy avocado rice.
  4. Slice the grilled chicken and layer it over a stack of avocado rice.
  5. Garnish with fresh cilantro and lime zest before serving.

Notes

Let the grilled chicken rest for a couple of minutes before slicing for a tender bite. When preparing avocado rice, fold gently to maintain some texture.
