Delightful grilled seafood skewers with succulent shrimp, tender fish, and colorful veggies, perfect for summer grilling.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb salmon or swordfish, cut into cubes
  • 1 bell pepper, cut into pieces
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • Your choice of herbs (parsley, thyme, or basil)
  • Salt and pepper to taste

Instructions

  1. Marinate the seafood and veggies in olive oil, garlic, herbs, salt, and pepper for at least 30 minutes.
  2. Preheat your grill to medium-high heat.
  3. Thread the marinated ingredients onto skewers.
  4. Grill skewers for about 8 to 10 minutes, turning occasionally until cooked through and slightly charred.
  5. Serve immediately with fresh lemon juice.

Notes

Ensure not to overcrowd the skewers for even cooking. Allow to rest off the grill for a few minutes before serving.
