A warm and cozy French Toast Casserole, perfect for breakfast, brunch, or dessert, with hints of cinnamon and vanilla.

Ingredients

  • 1 loaf brioche or challah, cubed
  • 6 large eggs
  • 2 cups milk (or plant-based milk)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 cup maple syrup (for serving)
  • Fresh berries or sliced bananas (for topping)

Instructions

  1. Preheat your oven to 350°F and prepare your baking dish.
  2. Cut the bread into cubes and place them in the dish.
  3. Whisk together the eggs, milk, vanilla, and cinnamon in a separate bowl.
  4. Pour this mixture over the bread cubes, ensuring they are well coated.
  5. Cover and let it rest for at least 1 hour or overnight.
  6. Bake uncovered until puffed and golden, about 35-40 minutes.
  7. Serve warm topped with maple syrup and fresh fruits.

Notes

Using day-old bread helps absorb the custard better without becoming mushy. Cover and reheat leftovers gently to maintain texture.
