A hearty meal featuring marinated flank steak, vibrant fresh veggies, and a base of grains.

Ingredients

  • 1 pound flank steak
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice of 2 limes
  • 1 bell pepper, sliced
  • 1 avocado, sliced
  • 2 cups cooked quinoa or brown rice
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Instructions

  1. Marinate the flank steak for at least 30 minutes with olive oil, garlic, lime juice, salt, and pepper.
  2. Heat a grill pan or skillet over medium-high heat.
  3. Sear the steak for 4–5 minutes on each side for medium rare.
  4. Let the steak rest for 5–10 minutes before slicing.
  5. Chop the bell pepper and avocado, sautéing if desired.
  6. Assemble the bowl with a base of grains, followed by sliced steak and veggies.
  7. Garnish with fresh herbs and serve.

Notes
