A delightful blend of tender potatoes and crisp green beans in a rich and tangy dressing, perfect for summer picnics and barbecues.

Ingredients

  • 2 cups potatoes, diced
  • 1 cup green beans, trimmed
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tsp mustard
  • Salt and pepper to taste
  • Fresh herbs (dill or parsley) for garnish

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 10-15 minutes.
  2. Add the green beans during the last few minutes of cooking.
  3. Drain and let cool.
  4. Mix the mayonnaise, Greek yogurt, mustard, salt, and pepper in a separate bowl.
  5. Fold the cooled potatoes and green beans into the dressing.
