A refreshing bowl of creamy corn cucumber salad that combines sweet corn and crisp cucumbers tossed in a luscious dressing.

Ingredients

  • 2 cups sweet corn (fresh, frozen, or canned)
  • 2 large cucumbers, diced
  • 1 cup yogurt or dairy-free alternative
  • 1 tablespoon fresh dill or parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Start by cutting cucumbers into bite-sized pieces and placing them in a large bowl.
  2. Add the sweet corn to the bowl.
  3. In a separate bowl, whisk together yogurt, dill, garlic powder, onion powder, lemon juice, salt, and pepper until smooth.
