Fresh, vibrant, and colorful, corn salsa is a delightful combination of sweet corn, zesty lime, and crunchy vegetables.

Ingredients

  • 2 cups fresh corn kernels
  • 1 cup diced tomatoes
  • 1 small red onion, finely chopped
  • Juice of 1 lime
  • Salt and pepper to taste
  • Optional: diced jalapeƱo, black beans, or avocado

Instructions

  1. Cook the corn if using fresh kernels, either on the grill or in boiling water until tender.
  2. Cool the corn and combine it with tomatoes, onions, and any other vegetables.
  3. Drizzle with freshly squeezed lime juice and fold everything gently.
  4. Taste and adjust seasoning if needed.
  5. Allow it to sit for a few minutes to let the flavors develop, then serve!
