A heartwarming classic apricot pie with a sweet, tangy filling and a flaky, buttery crust.

Ingredients

  • 2 cups fresh apricots, sliced
  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 1-2 tablespoons ice water

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Make the pie crust by mixing flour, cold butter, and salt until it resembles coarse crumbs.
  3. Chill the mixture briefly in the fridge to ensure a flaky texture.
  4. Prepare the filling by washing and slicing the apricots.
  5. Toss the apricots gently with sugar, cornstarch, cinnamon, and vanilla extract.
  6. Line your pie dish with the prepared crust.
  7. Fill the crust with the apricot mixture.
  8. Cover with a top crust or lattice.
  9. Bake for 45-50 minutes until the crust is golden and the filling bubbles.

Notes

Serve warm with vanilla ice cream or whipped cream. Store at room temperature for 1-2 days or refrigerate for up to a week.
