Delicious and comforting cheesy potato burritos that are perfect for a quick weeknight meal.

Ingredients

  • 4 medium potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 4 large tortillas
  • Salt and pepper to taste
  • Optional: sautéed onions, bell peppers, or spinach
  • Optional toppings: sour cream, fresh cilantro

Instructions

  1. Boil the potatoes until fork-tender.
  2. Drain and mash the potatoes with cheese until creamy.
  3. Spoon the potato mixture into the tortillas.
  4. Fold each tortilla tightly and place seam-side down in a baking dish.
