A comforting and moist banana bread made with ripe bananas and oil, perfect for breakfast or dessert.

Ingredients

  • 3 ripe bananas
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (or gluten-free blend)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped walnuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a bowl until smooth.
  3. Mix them with oil, egg, and vanilla extract until well combined.
  4. Whisk together the dry ingredients in a separate bowl.
  5. Gradually combine wet and dry ingredients, making sure not to overmix.
  6. Pour the batter into a greased loaf pan.
  7. Bake until golden brown and a toothpick inserted comes out clean, about 55-60 minutes.

Notes

Use very ripe bananas for the best flavor and moisture. Store banana bread in an airtight container at room temperature for up to three days or freeze for up to three months.
