Baked rhubarb fritters combine a crispy exterior with a tender, fruity filling for a delightful treat.

Ingredients

  • 2 cups fresh rhubarb, chopped
  • 1 cup all-purpose flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup milk
  • 2 tablespoons melted butter
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  2. Chop the rhubarb into small pieces and let it sit to release its juices.
  3. In a bowl, combine the flour, sugar, baking powder, and salt.
  4. Whisk in the egg, milk, and melted butter until well combined.
  5. Add the rhubarb to the batter and stir until incorporated.
